Space thyme plants about 12 inches apart to allow air circulation and prevent moisture buildup. This herb prefers lean soil and actually produces more flavorful leaves when grown in less-fertile conditions. Harvesting and Using Thyme

Begin harvesting thyme leaves once the plant is well-established, typically in early summer. Pinch off sprigs from the top of the plant to encourage bushier growth and continuous leaf production. Fresh thyme can be used immediately, while dried thyme retains its flavor exceptionally well and stores for extended periods in an airtight container.

Caring for Your Thyme Plants
